High Protein Cheesy Taco Pasta

Do you love pasta? Of course, you do. Do you wish you could have pasta without all the Calories? Of course, you do. Are you interested in a delicious pasta recipe that’s 70 Calories per 100g serving? Of course, you are!

Ingredients

  • 2lbs 90% lean ground beef, cooked and drained

  • 16 oz Shell Pasta

  • 3 oz Reduced Fat Shredded Fiesta Cheese

  • 1 cup Picante Salsa

  • 3 cans Chili Ready Tomatoes (they will say “chili ready” on the can)

  • 1 can Whole Kernel Corn, drained

  • 32 oz Chicken Broth

  • 1 Taco Packet (We used McCormick.)

  • 1 Ranch Packet

  • 2 Green Bell Peppers, diced

 
 

Directions:

  • Cook your ground beef in a skillet without adding any oil or cooking spray.

  • Drain ground beef and add into your crock-pot. (You could cook the bell pepper with the beef if you want them soft.)

  • Throw in the shredded cheese, salsa, corn, tomatoes, chicken broth, diced peppers, and seasoning packets.

  • Stir well and cook on high for 1.5 hours.

  • Pour in the UNCOOKED pasta shells and press down until they’re coated in juice.

  • Cook about 30 more minutes or until the noodles are to your liking.

Additional Notes

Our crock-pot is 7-quarts. If you have a smaller one, this may not fit in yours. If you need to lessen the amount, use 1-1.5 lbs of beef, 16 oz of chicken broth and only 2 cans of the tomatoes but keep in mind, if you alter the recipe, the nutrition information below will not be the same.

Remember that every time you reheat these leftovers (and there will be tons leftover), the noodles will cook more, so if you hate mushy noodles, keep that in mind. I think the leftovers taste as good as when the recipe is freshly cooked. My wife says she likes the left overs even better!

(If you used different branded ingredients, your nutrition information may be slightly different. Also, remember to add the Calories from your additional toppings if you added any.)
