Cajun Red Beans & Rice with Turkey Sausage

Ever since I heard Dave Ramsey go on and on about red beans and rice, I’ve wanted to try making it. I found a few recipes online but ended up just throwing things together to make it my own. It was kind of like jambalaya and was so delicious! I hope you try it!

P.S. it only cost me about $15 to make this!

Ingredients

  • 2 pouches Uncle Ben’s Whole Grain Brown Ready Rice

  • 2 packages Hillshire Farm’s Turkey Sausage Rope

  • 1 bell pepper, chopped

  • 2 tbsp tomato paste

  • 3 tbsp minced garlic

  • 1.5 tbsp Slap Ya Mama seasoning (I’m using less next time)

  • 3 fifteen-ounce cans light red kidney beans, drained

  • 3 cups chicken broth

 
 

Directions:

  • Cook rice pouches in the microwave then set aside

  • Spray Pam in a large skillet and brown up the turkey sausage (I cut mine into long strips and grilled for a few minutes then diced, but you can do this in a skillet too)

  • Take sausage out of the skillet and set aside

  • Spray skillet again and cook diced bell pepper for a few minutes

  • Add in the garlic, tomato paste, and cajun seasonings and stir around for a few minutes

  • Add in the beans, chicken broth, and sausage

  • Check the taste, if it is too spicy, add a little more chicken broth

  • Scoop out about a cup of the beans and mash them up then add back in

  • Simmer for about 15-20 minutes

  • Add in the cooked rice and stir

Additional Notes

If it’s still too soupy after simmering, let it simmer a little longer until more liquid has cooked out or you can mix a tbsp of flour with some water and add in to thicken it up. Don’t add the rice until you’re happy with the consistency, or it will become mushy. You could add so many things to this like cheese, onion, shrimp or chicken! I think next time I make this I will use 1-2 cups white jasmine rice instead of the Ready Rice. Just remember that any additional ingredients will change the nutrition information listed below.
