Do you have a sweet tooth? If you aren’t careful, you can derail your diet by overindulging in your favorite treats. Luckily, with my latest diet saving discovery, Kodiak Cakes high protein muffin mix, you can hit your nutrition targets without feeling deprived.
This recipe will yield 12 muffins.
Ingredients
2 large eggs
1 cup milk
1/3 cup oil (1/4 for chocolate chip muffins)
Prep
Preheat oven to 375 degrees F.
Line muffin tin with cups.
Combine ingredients into a mixing bowl.
Hand stir until mixed.
Divide batter into 12 lined muffin cups.
Bake for 15 - 18 minutes or until a toothpick comes out clean. (12 - 15 for chocolate chip muffins)
Let cool for 5 minutes

Additional notes
These muffins go great with breakfast. I personally like to eat them with a scrambled egg mixture consisting of four whole eggs, four egg whites, and an ounce of diced ham.
Also, keep in mind, these muffins are slightly less sweet than your typical muffin, which could be a good or bad thing based on your personal preferences. I personally like to add a small amount of whipped cream on top for a bit of added sweetness.
Lastly, the most important question:
Would I eat this if not on a diet? Yes. Like I said earlier, these muffins are not quite as sweet as your typical muffin, but I still think they’re very tasty.
